As well as being able to set your gender, Unarmed Civilian/pokemongeof, there's another option called gender visibility in the "privacy" section of your profile when you click "edit profile". Choose the "yes" option and your gender will show up.

Anything I posted before 2017 is prolly really embarrassing, ignore it

Depending on your age we hide certain profile information regardless of your settings. I believe the restriction is lifted if your profile age is 16+ years old.
