As we all I know, Pikachu and Piplup are a great team when it comes to battling, and great friends. And also, Pikachu and Piplup cannot evolve now that Ash and Dawn have used ever stones in them. And since Pokémon's actions and feelings are similar to their trainers, it means that Ash and Dawn are (obviously) great friends. Serena's Feniken is going to (has) evolve/d. Could it be that this may be a sign from the show that Serena's feelings for Ash have faded a bit? Though I'm not really sure if Feniken and Pikachu were GREAT friends. It could be maybe that Serena has moved on from Ash a bit, like May and her bulbasaur evolving. Just a theory, but what do you think?

First of all, Pikachu doesn't have an everstone. He doesn't need to because he evolves by thunderstone. I think Fenniken evolving is representing Serena for her growth as a character and as a performer. You do bring up a good point though. When I compare Pikachu to Braxien, I think about the relationship between Pikachu and May's Blazeiken.

The reason Fennekin evolving means something (especially to Amourshippers) is because of her possible romantic relationship with Ash's Froakie/Frogadier, also known as Insectivoreshipping. When Serena's Fennekin evolved into Braixen, Fennekin "caught up" with Frogadier. Especially with Masuda officially (but indirectly) acknowledging an Ash and Serena correlation with Froakie and Fennekin, Fennekin evolving really does mean something for Amourshippers.
This "Pokémon shipping" thing is also why most Amour and other shippers are against Pikachu and Buneary. Of course no one's going to like Pikachu and Buneary if it supports Ash and Dawn. In Pokeshipping/Amourshipping fanarts, they almost always pair Ash's Pikachu with another female Pikachu, and I'll bet you they knew about Buneary's existence. They probably wish their female could have a Pikachu as well to match. And it's pretty much over if Serena gets a female cosplay Pikachu. It would destroy Lagomorphshipping, one of the few Pearlshipping strongholds left in existence. But with something like Pikachu and Buneary still around, of course they are going to keep tabs on Amour's own Poke pairing. In short, Fennekin caught up to Frogadier, which means more hints.

"Insectivoreshipping"... Froakie/Fenniken (plus evolution forms) But... they... can't... breed. Unless it's platonic, I cannot compute on this.

Remember, the anime is a place where electric types can actually hurt ground types; this is anime logic unfortunately -_- Also, I checked the Pokémon Center online shop website, and a Pokémon Company product paired a male Pikachu with a female Pikachu. Please Serena, please do not get a female Pikachu. Please.

Besides, they fixed that Electric denting Ground issue later in the series. Don't give me that Pikachu VS Roark's Onix one. That was done simply due to the surroundings, and most likely Onix was enduring the flashing light part of that Thunderbolt. The 1st series also presented us Kabutops can't be hurt by Electric attacks. It's all just Kanto logic there.
